Ingredients

Main Ingredients
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons flour (optional, for thickening)
  • 1 tablespoon Worcestershire sauce

Method

Preparation
  1. In a large pot, heat the vegetable oil over medium-high heat. Brown the beef cubes on all sides.
  2. Add the onion and garlic, cooking until they are softened.
  3. Sprinkle the flour over the beef and stir to combine thoroughly.
Cooking
  1. Slowly add the beef broth, making sure to scrape the bottom of the pot for those flavorful bits.
  2. Stir in the carrots, potatoes, thyme, rosemary, Worcestershire sauce, salt, and pepper.
  3. Bring to a boil, then reduce heat to low. Cover and let it simmer for about 2 hours, or until the beef is tender.
  4. Adjust seasoning to taste, and serve hot.

Notes

Beef stew is versatile; you can serve it with crusty bread, over mashed potatoes, or with a side of rice. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat gently on the stove over low heat.
