- Add the butternut squash, apple, onion, potato, fennel, broth, ginger, cayenne, cinnamon, cloves, bay leaves, salt, and pepper to the crockpot.
- Cover and slow cook on low for about 4 to 6 hours until the vegetables are tender.
- Remove the bay leaves, and blend the soup using an immersion blender or a regular blender to your desired consistency.
- Stir in the oat milk or half and half, lemon juice, brown sugar, and butter. Adjust seasoning to taste.
- Serve hot, optionally topped with toasted pecans, walnuts, or a dollop of sour cream.
Notes
To enhance flavor, you may roast the butternut squash and onion before adding them to the slow cooker. For extra spice, add cayenne pepper or lemon juice before serving. Leftovers can be stored in airtight containers for up to five days in the fridge or frozen for up to three months.
