  • 1 lb Ground beef (or turkey for a lighter option)
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 medium Potatoes, diced
  • 2 medium Carrots, chopped
  • 2 stalks Celery, chopped
  • 4 cups Beef broth
  • 8 oz Cream cheese, softened For creaminess
  • 1 cup Shredded cheese For a cheesy finish
Seasonings
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Mustard
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat until fully cooked.
  2. In your slow cooker, combine the browned beef with chopped onions, garlic, diced potatoes, carrots, and celery.
  3. Pour in the beef broth along with Worcestershire sauce and mustard. Season with salt and pepper.
Cooking
  1. Cook on low for about 6–8 hours or high for 3–4 hours until the vegetables are tender.
  2. About 30 minutes before serving, stir in cream cheese and shredded cheese until melted and blended into the soup.

Notes

Consider garnishing with crumbled bacon, fresh parsley, or extra cheese. This soup is perfect with crusty bread for dipping. Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze the soup before adding dairy for up to 3 months.
