Preparation
- In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion has softened, about 8-10 minutes. Drain any excess grease and return to the skillet.
- Add the minced garlic to the skillet and stir for 30 seconds until fragrant.
- Transfer the beef mixture to the bottom of a 6-quart slow cooker.
- Add chicken broth, diced potatoes, frozen peas and carrots, cheddar cheese soup, and black pepper. Stir to combine.
Cooking
- Cover and cook on low for 7-8 hours, or on high for 4-5 hours if needed.
- An hour before serving, stir in heavy cream and Velveeta cubes. Cover and let the cheese melt and combine.
- Serve hot.
Notes
Pair with crusty bread or crackers and top with burger fixings like pickles or bacon bits. For added flavor, consider Worcestershire sauce or hot sauce.
