Ingredients
  

For the Soup
  • 1 pound ground beef You can substitute with ground turkey or plant-based meat.
  • 1 small sweet onion, diced
  • 2 cloves garlic, minced If using jarred garlic, add directly to slow cooker.
  • 4 cups low sodium chicken broth
  • 3 medium russet potatoes, peeled and diced
  • 12 ounces frozen peas and carrots (optional) Can be omitted if not desired.
  • 10.5 ounces can cheddar cheese soup
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream Add an hour before serving.
  • 8 ounces Velveeta, cut into cubes (optional) Optional for extra creaminess.

Method
 

Preparation
  1. In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion has softened, about 8-10 minutes. Drain any excess grease and return to the skillet.
  2. Add the minced garlic to the skillet and stir for 30 seconds until fragrant.
  3. Transfer the beef mixture to the bottom of a 6-quart slow cooker.
  4. Add chicken broth, diced potatoes, frozen peas and carrots, cheddar cheese soup, and black pepper. Stir to combine.
Cooking
  1. Cover and cook on low for 7-8 hours, or on high for 4-5 hours if needed.
  2. An hour before serving, stir in heavy cream and Velveeta cubes. Cover and let the cheese melt and combine.
  3. Serve hot.

Notes

Pair with crusty bread or crackers and top with burger fixings like pickles or bacon bits. For added flavor, consider Worcestershire sauce or hot sauce.
