Ingredients
  

For the Brine
  • 4 quarts Water Use filtered water for best results.
  • 1 cup Kosher salt
  • 1 cup Sugar
  • 3 tablespoons Pickling spices Includes black peppercorns, coriander seeds, mustard seeds, crushed red pepper, allspice berries, bay leaves.
For the Corned Beef
  • 5 pounds Beef brisket Point cut or flat cut can be used.
  • 3 cloves Garlic Crushed or smashed.
  • 1 large Onion Quartered.
  • 2 cups Seasonal vegetables Optional for serving.

Method
 

Preparation
  1. Prepare the brine by combining water, kosher salt, sugar, and pickling spices in a pot. Bring to a boil until salt and sugar dissolve. Let cool completely.
  2. Submerge the brisket in the cooled brine, ensuring it is fully covered, and refrigerate for at least 5-7 days.
  3. After curing, remove the brisket from the brine, rinse it under cold water, and pat it dry.
Cooking
  1. Place the brisket in a large pot with fresh water, garlic, onion, and any desired vegetables.
  2. Simmer gently for about 3-4 hours or until the meat is tender and easily pulls apart.
  3. Let the corned beef rest before slicing and serving.

Notes

Store leftover corned beef wrapped tightly in plastic wrap or foil in the refrigerator for up to five days or freeze for longer storage.
