Ingredients
  

Main Ingredients
  • 1 lb ground beef You can substitute with turkey or plant-based meat.
  • 1 can (15 oz) black beans, drained and rinsed Feel free to use pinto or kidney beans.
  • 1 can (15 oz) corn, drained
  • 4 medium potatoes, diced Sweet potatoes can be used for a healthier twist.
  • 1 can (10.5 oz) cream of mushroom soup Ensure it's gluten-free if needed.
  • 1 cup shredded cheese Cheddar or Monterey Jack are great options.
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. In a slow cooker, combine the browned beef, black beans, corn, diced potatoes, cream of mushroom soup, garlic powder, onion powder, and season with salt and pepper.
  3. Stir well to mix all ingredients thoroughly.
Cooking
  1. Cover and cook on low for 6-8 hours, or on high for 3-4 hours until the potatoes are tender.
  2. Before serving, sprinkle the shredded cheese over the top and allow it to melt.
  3. Serve warm and enjoy!

Notes

Cowboy Casserole is best served hot, paired with a side salad or crusty bread. For a twist, add sour cream or avocado slices when serving. Store leftovers in an airtight container for 3-4 days or freeze for up to 2-3 months.
