- In a skillet, brown the ground beef over medium heat. Drain any excess fat.
- In a slow cooker, combine the browned beef, black beans, corn, diced potatoes, cream of mushroom soup, garlic powder, onion powder, and season with salt and pepper.
- Stir well to mix all ingredients thoroughly.
Cooking
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours until the potatoes are tender.
- Before serving, sprinkle the shredded cheese over the top and allow it to melt.
- Serve warm and enjoy!
Notes
Cowboy Casserole is best served hot, paired with a side salad or crusty bread. For a twist, add sour cream or avocado slices when serving. Store leftovers in an airtight container for 3-4 days or freeze for up to 2-3 months.
