  • 8 oz pasta (such as rotini or penne) Can substitute for whole grain or gluten-free versions.
  • 1 cup sour cream Greek yogurt is a healthier alternative.
  • 1 can cream of chicken soup Standard ingredient for creaminess.
  • 2 cups shredded cheese (cheddar or a blend) Reserve some for topping.
  • 1 cup chicken broth
  • to taste Salt and pepper For seasoning.
  • optional breadcrumbs for topping For a crunchy texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package instructions; once done, drain it and set aside.
  3. In a large mixing bowl, combine the cooked chicken, cooked pasta, sour cream, cream of chicken soup, 1 cup of shredded cheese, and chicken broth. Season with salt and pepper.
  4. Pour the mixture into a greased casserole dish, spreading it evenly.
  5. Top with the remaining cheese and sprinkle breadcrumbs over it if desired.
Baking
  1. Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and the casserole is bubbling.
  2. Let it cool for a few moments before serving.

Notes

Great served with a crisp green salad or steamed vegetables. Leftovers can be stored in an airtight container for 3-4 days or frozen for longer storage.
