- Cover again and cook on high for an additional hour, until the gnocchi are soft and the broth has slightly thickened.
- Stir in the spinach and Parmesan, adjusting seasonings to taste before serving.

Notes
Great with a side of fresh salad or crusty bread. Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months. Searing the chicken before cooking enhances flavor.
