Main Ingredients
  • 2 boneless skinless chicken breasts (about 1 lb) Provides protein and flavor.
  • 4 cups low sodium chicken broth Low sodium to control salt level.
  • 3/4 cup heavy cream Adds creaminess to the soup.
  • 1 tablespoon corn starch Used for thickening the soup.
  • 3 cups small gnocchi (500g) Use fresh or frozen gnocchi.
  • 1.5 cups fresh spinach, roughly chopped Fresh spinach for nutrition.
  • 1/4 cup grated Parmesan cheese For garnish and flavor.

Method
 

Preparation
  1. Add one Reynolds Kitchens Slow Cooker Liner to a 4-6 quart slow cooker.
  2. Toss in the celery, carrots, onion, parsley, garlic, thyme, salt, pepper, and broth. Give it a good stir.
  3. Place the chicken breasts in the cooker, pressing them down into the liquid.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the vegetables are tender.
Finishing Touches
  1. Shred the chicken right in the slow cooker or remove it to a cutting board, chop, and return it to the soup.
  2. Whisk together the cream and corn starch before stirring it into the soup along with the gnocchi.
  3. Cover again and cook on high for an additional hour, until the gnocchi are soft and the broth has slightly thickened.
  4. Stir in the spinach and Parmesan, adjusting seasonings to taste before serving.
  5. Finally, remove the Reynolds Kitchens Slow Cooker Liner for a quick and easy clean-up.

Notes

Great with a side of fresh salad or crusty bread. Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months. Searing the chicken before cooking enhances flavor.
