  • 2 cups chicken breasts Ensure chicken is thawed for even cooking.
  • 1 cup rice Regular or brown rice can be used; brown rice may require longer cooking time.
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots Add in last 30 minutes of cooking.
  • to taste Salt and pepper

Method
 

Preparation
  1. Place chicken breasts at the bottom of the crockpot.
  2. In a separate bowl, mix together the cream of chicken soup, chicken broth, diced onion, minced garlic, salt, and pepper.
  3. Pour the creamy mixture over the chicken in the crockpot, ensuring everything is coated well.
  4. Add the rice on top and gently stir to combine, making sure the rice is submerged in the mixture.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for about 3-4 hours.
  2. Around 30 minutes before serving, stir in the frozen peas and carrots.
  3. Once everything is cooked, shred the chicken directly in the crockpot and mix everything together before serving.

Notes

This dish pairs nicely with a simple side salad or steamed vegetables. For a heartier meal, consider serving it with warm bread. It can be frozen for future meals.
