  • 2 lbs boneless skinless chicken breasts
  • 1.5 cups fresh baby spinach
  • 1 bunch fresh basil
  • 4 cloves garlic, minced
  • 1 small onion, chopped
  • 1 jar Alfredo sauce (15 oz)
  • 16 oz rotini pasta
  • 1.5 tsp Italian seasoning
  • 0.5 tsp paprika
  • Salt and pepper to taste
  • 0.5 cup sun-dried tomatoes, drained well
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker and season with salt, pepper, Italian seasoning, and paprika.
  2. Layer the chopped onion, minced garlic, sun-dried tomatoes, and Alfredo sauce over the chicken.
  3. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  4. About 30 minutes before serving, cook the rotini pasta according to the package instructions.
  5. Once the chicken is done, shred it in the slow cooker and stir in the heavy cream, fresh spinach, and basil.
  6. Finally, add the cooked pasta and Parmesan cheese, mixing until everything is well combined.

Notes

For added depth of flavor, consider browning the chicken in a skillet before adding it to the slow cooker. You may also add red pepper flakes for a spicy kick. Leftovers can be stored in an airtight container in the refrigerator for up to three days or can be frozen for up to three months.
