- Place the chicken breasts in the slow cooker and season with salt, pepper, Italian seasoning, and paprika.
- Layer the chopped onion, minced garlic, sun-dried tomatoes, and Alfredo sauce over the chicken.
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- About 30 minutes before serving, cook the rotini pasta according to the package instructions.
- Once the chicken is done, shred it in the slow cooker and stir in the heavy cream, fresh spinach, and basil.
- Finally, add the cooked pasta and Parmesan cheese, mixing until everything is well combined.
Notes
For added depth of flavor, consider browning the chicken in a skillet before adding it to the slow cooker. You may also add red pepper flakes for a spicy kick. Leftovers can be stored in an airtight container in the refrigerator for up to three days or can be frozen for up to three months.
