Ingredients
  

Cheese and Dairy
  • 1 pound Monterey Jack cheese Cut into cubes
  • 8 ounces cream cheese Cut into cubes
  • 12 ounces evaporated milk 1 can
Spices and Seasonings
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
Vegetables
  • 4 ounces green chiles 1 can
  • 4 ounces pickled diced jalapeños 1 can, including juice

Preparation
  1. Cut the Monterey Jack cheese and cream cheese into cubes. Add both to the slow cooker.
  2. In a separate bowl, whisk together the evaporated milk and cornstarch until smooth.
  3. Pour this mixture into the slow cooker with the cheeses.
  4. Next, add the green chiles, garlic powder, salt, and jalapeños, including their juice.
Cooking
  1. Cook on low in the slow cooker for about 2 hours, stirring occasionally. Keep an eye on it to ensure the cheese doesn’t burn.

Notes

Serve with tortilla chips, fresh veggie sticks, over baked potatoes, or stuffed in tacos. Consider adding smoked paprika or cayenne for extra flavor. Stir occasionally for even melting and use Cheddar cheese as a substitute for Monterey Jack if desired.
