Ingredients
  

For the soup
  • 3 cans (28 ounce) crushed tomatoes
  • 6 cups chicken broth
  • 1 medium yellow onion, finely chopped
  • 1.5 pounds sweet or spicy Italian sausage
  • 2 tablespoons garlic, minced
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons salt (to taste)
  • 1 teaspoon crushed red pepper Adjust for spice level
  • 2 tablespoons Italian seasoning
  • 0.5 teaspoon black pepper
  • 2 cups kale, roughly chopped
  • 1 cup heavy cream or half-and-half
  • 1 cup grated parmesan cheese (plus more for topping)
  • 20 ounces refrigerated cheese tortellini

Method
 

Cooking the sausage mixture
  1. In a large pan, add the sausage, onion, and garlic. Cook over medium-high heat until the sausage is completely cooked through, about 8-10 minutes.
  2. If desired, remove excess grease.
Slow cooking
  1. Transfer the cooked sausage mixture to a 6-quart slow cooker.
  2. Add the chicken broth, crushed tomatoes, and all the seasonings.
  3. Cover and cook on high for 2-3 hours or low for 4-5 hours.
Final touches
  1. When ready, stir in the heavy cream, shredded parmesan cheese, and tortellini, cooking for an additional 20 minutes.
  2. Finally, add the chopped kale to the pot and let it cook for an extra 10 minutes.
  3. Serve garnished with more cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For freezing, allow to cool completely before transferring to a freezer-safe container; lasts for about 3 months.
