Ingredients
  

Main ingredients
  • 2 lbs Beef chuck or stew meat Choose a well-marbled cut for best flavor.
  • 1 piece Bay leaf
  • 4 medium Carrots, chopped
  • 4 cloves Garlic, minced
  • 1 large Onion, chopped
  • 4 cups Beef broth Can substitute with chicken or vegetable broth.
  • 2 tbsp Worcestershire sauce Check for gluten if needed.
  • to taste Black pepper, freshly ground
  • to taste Salt
  • 1 teaspoon Thyme (dried or 2-3 fresh sprigs) Use fresh for a more intense flavor.
  • 1.5-2 lbs Potatoes (peeled and cubed, Yukon Gold or Russet)

Method
 

Preparation
  1. Place the beef, bay leaf, carrots, garlic, onion, beef broth, Worcestershire sauce, black pepper, salt, thyme, and potatoes into your crock pot.
  2. Stir all the ingredients to combine them well.
Cooking
  1. Cover and cook on low for approximately 8 hours, or until the beef is wonderfully tender.
  2. Before serving, remove the bay leaf.

Notes

Enjoy it straight from the pot or ladle it into deep bowls. Pairs beautifully with crusty bread or buttery rolls. Leftovers can be refrigerated for up to 3-4 days or frozen for up to 3 months.
