  • 1 lb beef (thinly sliced)
  • 1 piece red bell pepper (sliced)
  • 1 piece green bell pepper (sliced)
  • 1 piece onion (sliced)
  • 1 cup mushrooms (sliced)
  • 2 cups cheese tortellini Frozen tortellini can be used.
  • 1 cup beef broth
  • 1 cup cream cheese
  • 1 cup shredded cheese (like provolone or mozzarella) For topping.

Method
 

Preparation
  1. In your slow cooker, combine the thinly sliced beef, bell peppers, onion, and mushrooms.
  2. Pour in the beef broth and add the cream cheese to the mixture.
  3. Stir everything together until well mixed.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, add the tortellini and shredded cheese.
  3. Stir occasionally until the tortellini is cooked and the cheese has melted beautifully.
  4. Season with salt and pepper to taste.
Serving

Notes

For storage, place leftovers in an airtight container in the refrigerator for 3-4 days. For freezing, allow to cool completely and store in freezer-safe containers for 2-3 months.
