- Place the chicken breasts at the bottom of the crock pot.
- Rinse the rice and add it to the pot, followed by the onions, garlic, and frozen vegetables.
- Pour the chicken broth over the ingredients and season with salt, pepper, garlic powder, and paprika.
- Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
- Once done, shred the chicken in the pot, stir everything together, and serve warm.
Notes
Serve in bowls garnished with fresh herbs or with a light salad and crusty bread. For added flavor, try a squeeze of lemon or a sprinkle of grated cheese before serving.
