Ingredients
  

Main ingredients
  • 4 pieces chicken breasts Boneless, skinless
  • 1 cup long grain rice Rinse before adding to the crock pot
  • 2 cups chicken broth Can substitute with water or vegetable broth
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables Feel free to substitute with other veggies
  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crock pot.
  2. Rinse the rice and add it to the pot, followed by the onions, garlic, and frozen vegetables.
  3. Pour the chicken broth over the ingredients and season with salt, pepper, garlic powder, and paprika.
  4. Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
  5. Once done, shred the chicken in the pot, stir everything together, and serve warm.

Notes

Serve in bowls garnished with fresh herbs or with a light salad and crusty bread. For added flavor, try a squeeze of lemon or a sprinkle of grated cheese before serving.
