- Start by placing the chicken breasts, celery, carrot, onion, garlic, thyme, Italian seasoning, poultry seasoning, salt, black pepper, and chicken broth into the crock pot.
- Cover and set it to cook on low for 6-8 hours or high for 3-4 hours until the chicken shreds easily.
- Once cooked, remove the chicken, shred it, and return it to the pot.
- In a small bowl, whisk together the heavy cream and cornstarch until smooth.
- Add the cream mixture and gnocchi into the crock pot, cover, and continue cooking on low for 45 to 60 minutes or high for 25 to 30 minutes, until the gnocchi is tender.
- Stir in the chopped spinach, allowing the soup to sit uncovered for an additional 5 to 10 minutes until the spinach wilts and the soup thickens slightly.
- Serve hot, topped with fresh grated parmesan cheese, and enjoy the comforting bowl of goodness!
Notes
For optimal flavor, consider seasoning your chicken before adding it to the crock pot. You can also sauté the vegetables beforehand to enhance their flavors. To store leftovers, use an airtight container in the refrigerator for up to four days; it also freezes well without spinach.
