  • 2 cups cooked chicken, shredded Cooked ahead of time; can use rotisserie chicken.
  • 2 cups mixed vegetables (peas, carrots, corn) Feel free to customize or use frozen/fresh options.
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 package refrigerated biscuit dough
  • to taste Salt and pepper

Method
 

Preparation
  1. In a slow cooker, combine the cooked chicken, mixed vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, thyme, salt, and pepper. Stir everything to combine well.
  2. Cover and cook on low for 4-6 hours or until the vegetables are tender.
  3. About 30 minutes before serving, take the biscuit dough and break it into pieces. Place these pieces on top of the chicken and vegetable mixture in the slow cooker.
  4. Cover and continue cooking for another 30 minutes, or until the biscuits are golden brown and fully cooked through.
  5. Serve warm and enjoy your comforting dish!

Notes

Great served with a light side salad or crusty bread. For the best results, keep the lid closed during cooking. You can add diced potatoes, use different herbs, or sprinkle cheddar cheese on top for variations.
