Ingredients

Main Ingredients
  • 2 lbs boneless, skinless chicken breasts
  • 1 packet taco seasoning Generously sprinkle over chicken.
  • 1/3 cup butter Slice into pats and distribute on top of chicken.

Method

Preparation
  1. Spray the inside of a small Crock-Pot with cooking spray for easier clean-up (this is optional).
  2. Place the chicken breasts into the Crock-Pot.
  3. Generously sprinkle the taco seasoning over the chicken.
  4. Slice the butter into pats and distribute them evenly on top of the seasoned chicken.
  5. Cover the pot and cook on Low for 5-7 hours or on High for 3-4 hours.
  6. For best flavor, if time allows, turn off the heat and let the chicken rest, covered, for an additional 30-45 minutes.
  7. Using two forks, shred the chicken and serve with taco shells, adding your favorite toppings such as lettuce, cheese, salsa, or avocado.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Consider marinating the chicken in salsa or lime juice for added flavor. You can also swap butter for olive oil for a different taste.
