  • 1 packet ranch seasoning
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained Substitute with kidney beans if desired
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies

Preparation
  1. Start by placing the chicken breasts in the slow cooker.
  2. Sprinkle the ranch and taco seasoning evenly over the chicken.
  3. Pour the black beans, corn, and diced tomatoes on top of the seasoned chicken.
  4. Season with salt and pepper according to your taste.
  5. Cover the slow cooker and cook on low for 6-8 hours or on high for about 4 hours.
  6. Once cooked, use two forks to shred the chicken right in the cooker, mixing it with the other ingredients.
  7. Serve it hot with rice or warm tortillas.

Notes

To keep leftovers fresh, store uneaten dish in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or microwave until thoroughly heated.
