Preparation
- Whisk together the soy sauce, ketchup, honey, and minced garlic in a bowl until well combined.
- Spray the crockpot insert with nonstick spray to prevent sticking.
- Arrange the chicken thighs in a single layer in the bottom of the crockpot.
- Pour the prepared sauce over the chicken and toss it gently to ensure each piece is well coated.
Cooking
- Cover the crockpot and cook on high for 2-3 hours or on low for 4-5 hours, until the internal temperature of the chicken reaches 165°F.
- Once cooked, remove the chicken and set it aside.
- In a small bowl, whisk the cornstarch and cold water together, then stir this mixture into the remaining sauce in the crockpot.
- Cover and cook for another 15 minutes or until the sauce thickens to your desired consistency.
- Return the chicken to the crockpot, tossing it in the thickened sauce before serving.
- Garnish with sesame seeds and sliced green onions for a beautiful presentation.
Notes
Serve this honey garlic chicken over steamed rice or quinoa to soak up the sauce. Roasted vegetables or a simple side salad would complement the meal beautifully. Can store in an airtight container for up to 3 days or freeze for up to 3 months.
