  • 6 pieces skinless, bone-in chicken thighs You can also use boneless thighs or chicken breasts, but be mindful of cooking times.
  • ½ cup low-sodium soy sauce Gluten-free if needed.
  • cup ketchup
  • cup honey
  • 6 cloves garlic Minced.
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water Make sure it’s cold to avoid clumping.
  • ½ tablespoon sesame seeds
  • 1 piece green onion Sliced.

Method
 

Preparation
  1. Whisk together the soy sauce, ketchup, honey, and minced garlic in a bowl until well combined.
  2. Spray the crockpot insert with nonstick spray to prevent sticking.
  3. Arrange the chicken thighs in a single layer in the bottom of the crockpot.
  4. Pour the prepared sauce over the chicken and toss it gently to ensure each piece is well coated.
Cooking
  1. Cover the crockpot and cook on high for 2-3 hours or on low for 4-5 hours, until the internal temperature of the chicken reaches 165°F.
  2. Once cooked, remove the chicken and set it aside.
  3. In a small bowl, whisk the cornstarch and cold water together, then stir this mixture into the remaining sauce in the crockpot.
  4. Cover and cook for another 15 minutes or until the sauce thickens to your desired consistency.
  5. Return the chicken to the crockpot, tossing it in the thickened sauce before serving.
  6. Garnish with sesame seeds and sliced green onions for a beautiful presentation.

Notes

Serve this honey garlic chicken over steamed rice or quinoa to soak up the sauce. Roasted vegetables or a simple side salad would complement the meal beautifully. Can store in an airtight container for up to 3 days or freeze for up to 3 months.
