  • 3 lb Chuck roast, trimmed and cut into large pieces Choose a high-quality chuck roast for better texture and flavor.
  • 1 envelope Italian salad dressing mix
  • 8 oz Pepperoncini pepper slices plus a splash of juice
  • 8 oz Chicago-Style Giardiniera, drained Can be substituted with sliced pickled vegetables if unavailable.
  • 14.5 oz Beef broth
  • Provolone cheese slices Can be replaced with mozzarella or pepper jack for variation.
  • Buns Serve on your preferred type of buns.

Preparation
  1. Place the chuck roast into the bottom of a 6-quart crock pot, then sprinkle the Italian salad dressing mix over the top.
  2. Add the pepperoncini peppers along with a splash of juice, the drained Giardiniera, and the beef broth.
  3. Gently lift the chuck roast pieces to get the broth underneath.
Cooking
  1. Cover with a lid and cook on low for about 9 hours, or until the meat shreds easily with a fork.
  2. Once cooked, shred the beef and return it to the juices in the crock pot. Let it cook on low for an additional hour.
Serving
  1. Split the buns in half and scoop the shredded meat mixture on top.
  2. Add provolone cheese slices and top with additional pepperoncini peppers and Giardiniera if desired. Serve hot.

Notes

Serve with crispy fries or a fresh salad. For a delightful twist, consider adding sautéed onions or a side of marinara for dipping. Store any leftovers in an airtight container in the refrigerator for up to three days.
