Main ingredients
  • 1 pound ground beef Can be substituted with ground turkey or chicken.
  • 1 medium onion, diced
  • 3 medium carrots, chopped
  • 3 medium potatoes, diced
  • 2 stalks celery, chopped
  • 1 can 14.5 oz diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 1 bay leaf Remove before serving.

Preparation
  1. In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. Transfer the browned beef to a crockpot. Add the diced onion, chopped carrots, diced potatoes, chopped celery, diced tomatoes, beef broth, garlic powder, paprika, salt, pepper, and the bay leaf.
  3. Stir everything together to combine the ingredients well.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  2. Before serving, remove the bay leaf and enjoy your delicious stew!

Notes

Serve with crusty bread or light salad. Cornbread on the side pairs beautifully with the stew. Sprinkle chopped parsley or green onions before serving for freshness.
