Preparation
- Heat the olive oil in a skillet over medium heat.
- Add the beef stew meat, season with salt and pepper, and brown on all sides.
- Transfer the browned meat into your crockpot.
- In the same pot, add the sliced carrots, diced potatoes, chopped onion, and minced garlic.
- In a separate bowl, whisk together the beef broth, tomato paste, thyme, and paprika; pour this mixture over the meat and vegetables in the crockpot.
Cooking
- Cover and cook on low for 7-8 hours or until the meat and vegetables are tender.
Notes
Allow stew to cool completely before storing. Store in an airtight container for up to three days in the refrigerator; can freeze for up to three months.
