Main Ingredients
  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth Can substitute with vegetable broth.
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil For browning the beef.

Method
 

Preparation
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the beef stew meat, season with salt and pepper, and brown on all sides.
  3. Transfer the browned meat into your crockpot.
  4. In the same pot, add the sliced carrots, diced potatoes, chopped onion, and minced garlic.
  5. In a separate bowl, whisk together the beef broth, tomato paste, thyme, and paprika; pour this mixture over the meat and vegetables in the crockpot.
Cooking
  1. Cover and cook on low for 7-8 hours or until the meat and vegetables are tender.

Notes

Allow stew to cool completely before storing. Store in an airtight container for up to three days in the refrigerator; can freeze for up to three months.
