  • 4 pieces boneless, skinless chicken breasts
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese Added before serving
  • 4 medium potatoes, diced
  • 2 cups carrots, sliced
  • 1 packet ranch seasoning mix
  • to taste salt and pepper

Method
 

Preparation
  1. Dice the potatoes and slice the carrots.
  2. Season the chicken breasts with salt and pepper.
  3. Mix ranch dressing with ranch seasoning in a bowl.
Cooking
  1. Layer the diced potatoes and sliced carrots at the bottom of the slow cooker.
  2. Place the seasoned chicken breasts on top of the vegetables.
  3. Pour the ranch dressing mixture over the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through.
  5. About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
Serving
  1. Serve warm over a bed of rice or alongside warm dinner rolls and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to three months.
