Preparation
- Dice the potatoes and slice the carrots.
- Season the chicken breasts with salt and pepper.
- Mix ranch dressing with ranch seasoning in a bowl.
Cooking
- Layer the diced potatoes and sliced carrots at the bottom of the slow cooker.
- Place the seasoned chicken breasts on top of the vegetables.
- Pour the ranch dressing mixture over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through.
- About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
Serving
- Serve warm over a bed of rice or alongside warm dinner rolls and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to three months.
