Ingredients
  

For the Chicken Mixture
  • 2 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth Use low-sodium for a healthier option
  • 1 can cream of chicken soup
  • 1 cup frozen peas and carrots
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
For the Dumplings
  • 1 can refrigerated biscuit dough

Method
 

Preparation
  1. Begin by placing the chicken breasts in the crockpot.
  2. Add the chicken broth, cream of chicken soup, peas and carrots, onion, garlic, thyme, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 4 hours.
  4. About 30 minutes before serving, tear the biscuit dough into pieces and place them on top of the chicken mixture.
  5. Cover again and cook until the biscuits are puffed and cooked through.
  6. Serve warm and enjoy each blissful bite!

Notes

For maximum flavor, sear your chicken before adding it to the crockpot. You can experiment with vegetable add-ins like celery or corn. Consider serving with a side of crusty bread or a fresh salad to round out the meal.
