- In your crockpot, place the chicken breasts and season them generously with salt, pepper, and thyme.
- Add the diced onion, minced garlic, and mixed vegetables over the chicken.
- Pour the chicken broth over everything, immersing the ingredients.
- Cover the crockpot and set it to cook on low for 6-8 hours or on high for 4 hours.
- About 30 minutes before you’re ready to serve, carefully remove the chicken. Shred it using two forks, then return the shredded chicken to the crockpot.
- Stir in the egg noodles, cover once again, and cook for an additional 30 minutes, or until the noodles are nice and tender.
- Serve this warm, hearty dish hot from the pot!
Notes
Consider garnishing with fresh parsley or parmesan. Pairs well with crusty bread or a fresh garden salad. For longer storage, freeze for up to three months.
