  • 3 cups chicken broth
  • 2 cups egg noodles
  • 1 cup mixed vegetables (carrots, peas, corn) Customize according to family preferences

  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil For optional searing
  • 1 teaspoon dried thyme

Preparation
  1. In your crockpot, place the chicken breasts and season them generously with salt, pepper, and thyme.
  2. Add the diced onion, minced garlic, and mixed vegetables over the chicken.
  3. Pour the chicken broth over everything, immersing the ingredients.
  4. Cover the crockpot and set it to cook on low for 6-8 hours or on high for 4 hours.
  5. About 30 minutes before you’re ready to serve, carefully remove the chicken. Shred it using two forks, then return the shredded chicken to the crockpot.
  6. Stir in the egg noodles, cover once again, and cook for an additional 30 minutes, or until the noodles are nice and tender.
  7. Serve this warm, hearty dish hot from the pot!

Notes

Consider garnishing with fresh parsley or parmesan. Pairs well with crusty bread or a fresh garden salad. For longer storage, freeze for up to three months.
