  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth Use homemade or store-bought for best flavor.
  • 2 cups carrots (sliced or diced)
  • 1 cup celery (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced) Try sautéing for extra flavor.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • to taste Salt and pepper Adjust according to preference.
  • 2 cups egg noodles
  • optional fresh parsley for garnish

Method
 

Preparation
  1. Start by placing the chicken breasts at the bottom of your crockpot.
  2. Pour the chicken broth over the chicken, then add in the carrots, celery, onion, and garlic.
  3. Season with thyme, parsley, salt, and pepper. Give it a gentle stir to combine all the ingredients.
Cooking
  1. Cover and cook on low for about 6-7 hours or on high for 3-4 hours, until the chicken is incredibly tender.
  2. Once cooked, take out the chicken, shred it with two forks, and return it to the pot.
  3. About 20-30 minutes before serving, stir in the egg noodles and let them cook until tender.
Serving
  1. Serve hot and enjoy with a sprinkle of fresh parsley, if desired.

Notes

Store leftovers in an airtight container. It can be frozen for up to three months. For reheating, warm on the stove or microwave until piping hot. Don't refreeze thawed soup. Customize with other veggies or seasonings as desired.
