  • 2-3 lbs beef pot roast Substitutions: Chicken or plant-based alternatives can be used.
  • 1 can chipotle peppers in adobo sauce Adjust quantity for desired spice level.
  • 1 cup pineapple chunks Fresh or canned can be used.
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • to taste Salt and pepper
  • 2 cups cooked rice For serving.
  • 1 can black beans, drained and rinsed
  • 1 cup corn Fresh or frozen can be used.
  • 1 large avocado, sliced For topping.
  • to serve Lime wedges For garnish.

Method
 

Preparation
  1. In a crockpot, place the beef pot roast.
  2. Add chopped onion, minced garlic, chipotle peppers with adobo sauce, and pineapple chunks on top.
  3. Pour in the beef broth and season with salt and pepper.
  4. Cover and cook on low for 8 hours or until the beef is tender.
  5. Once cooked, shred the beef with two forks and mix it with the sauce.
Serving
  1. Layer cooked rice in bowls, top with shredded beef, black beans, corn, and avocado.
  2. Squeeze fresh lime juice over the bowls and enjoy.

Notes

For best flavor, sear the beef in a pan before adding to the crockpot. Consider adding sautéed bell peppers or jalapeños for a spicier kick. Serve with tortilla chips or a side salad.
