  • 1 pound lean ground beef (browned and drained) Use lean beef to reduce fat content.
  • 2 cups beef broth Ensure broth is gluten-free if needed.
  • 1 large yellow onion (diced)
  • 1 large green bell pepper (diced)
  • 15.25 oz can kidney beans (drained)
  • 15 oz can black beans (drained)
  • 15.5 oz can sweet corn (drained)
  • 14.5 oz can diced tomatoes
  • 1 cup BBQ sauce Check for gluten-free options if necessary.
  • 1 Tablespoon chili powder
  • 1 teaspoon minced garlic
  • 0.5 teaspoon cumin
  • 1 teaspoon salt Adjust to taste.
  • 0.5 teaspoon ground black pepper

Method
 

Preparation
  1. Start by browning the ground beef in a skillet, then drain any excess grease.
  2. In your crockpot, combine all the ingredients, starting with the beef, followed by the veggies and remaining ingredients.
  3. Stir everything well to ensure an even mix.
Cooking
  1. Cover and cook on high for about 4 hours or on low for about 6 hours.
  2. When it’s done, give it a good stir and adjust the seasonings to your preference.
Serving
  1. Serve as is, or pair with toppings like shredded cheese, oyster crackers, or corn chips for added texture.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3-4 days. To keep longer, freeze for up to 3 months.
