For the carrots
  • 2 lb baby carrots
  • 2 Tablespoons butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/3 cup honey

Method

Preparation
  1. Start by spraying the slow cooker insert with cooking spray to prevent sticking.
  2. Add the baby carrots to the slow cooker.
  3. Cut the butter into small pieces and distribute it evenly over the carrots.
  4. Sprinkle the ground cinnamon, ground ginger, and salt over the top.
  5. Drizzle honey over the carrots to create a glaze.
  6. Cook on high for 4-5 hours or until the carrots are tender.
  7. Stir to coat the carrots in the glaze, and serve warm.
  8. If the glaze seems too thin, remove the lid and continue cooking on high until it thickens to your liking.

Notes

This dish pairs well with roasted chicken or glazed ham. For storage, keep in an airtight container in the refrigerator for up to 5 days, or freeze for 2-3 months. Consider adding chopped fresh herbs or substituting maple syrup for honey for variation.
