Ingredients
  

For the Steak and Sauce
  • ½ tbsp olive oil
  • 2 lbs sirloin steak, sliced into bite-sized strips
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tsp sesame oil
  • ¼ cup brown sugar
  • ¼ cup soy sauce
  • 1 cup beef broth
  • 1 medium onion, sliced
  • 2 bell peppers sliced (choose your favorite colors)
  • 2 tbsp cornstarch
  • 2 tbsp water

Method
 

Preparation
  1. In a skillet, warm the olive oil over medium heat.
  2. Add the steak strips, seasoning them with salt and pepper. Cook until the steak is browned but not cooked through, then remove from heat.
  3. In a crockpot, combine the minced garlic, ginger, sesame oil, brown sugar, soy sauce, and beef broth. Whisk until everything is well mixed.
Cooking
  1. Add the browned steak and sliced onion to the crockpot, stir to ensure it's well coated in the sauce.
  2. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  3. In the last 30 minutes of cooking, add the sliced bell peppers and the cornstarch mixed with water to thicken the sauce.
  4. Cover and cook on high until the peppers are tender and the sauce has thickened.

Notes

For serving, Crockpot Pepper Steak is best served over rice or noodles and can be garnished with sesame seeds or chopped green onions. Store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for longer storage after thawing in the fridge.
