  • 2 lbs beef sirloin or flank steak Cut into strips
  • 14.5 oz canned diced tomatoes
  • 3 pieces bell peppers Use a variety of colors
  • 4 cloves garlic Minced
  • 1 tbsp fresh ginger Grated
  • 1 piece green onion Sliced
  • 1 large onion Chopped
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 cups white rice For serving
  • 2 tbsp packed brown sugar
  • 2 tbsp cornstarch
  • Salt and pepper to taste

Method
 

Preparation
  1. Cut the beef into strips and place them in the crockpot.
  2. Add the diced tomatoes, chopped bell peppers, minced garlic, grated ginger, sliced green onion, and chopped onion to the beef.
  3. Pour in the beef broth and soy sauce, followed by the Worcestershire sauce, brown sugar, cornstarch, salt, and pepper.
  4. Stir everything together until it’s well combined.
  5. Cover and cook on low for about 6 hours or until the beef is tender and flavorful.
  6. Serve the pepper steak over cooked white rice for a complete meal.

Notes

For added depth of flavor, sear the beef in a skillet before adding to the crockpot. Customize vegetables as desired, try adding mushrooms or carrots for more heartiness. For thicker sauce, mix more cornstarch with water to create a slurry and add it during the last hour of cooking.
