- Rinse the kidney beans thoroughly under cold water and place them in a colander.
- In the crock of a slow cooker, combine the rinsed beans, sausage, celery, onions, bell peppers, garlic, chili powder, salt, cumin, thyme, cayenne pepper, paprika, brown sugar, and black pepper.
- Stir in the chicken broth and water until everything is well combined.
Cooking
- Cover and cook on high for 6-8 hours, until the beans are completely cooked through and tender.
- Taste and adjust seasoning as desired.
Serving
- Serve over cooked white rice and garnish with sliced green onions if desired.
- For a creamier texture, feel free to gently mash the beans before serving.
Notes
For best results, soak the beans overnight to help soften them and reduce cooking time. Store leftovers in an airtight container for up to 4 days or freeze for up to three months.
