  • 2 lb 4 boneless skinless chicken breasts About 2 pounds total
  • ¾ cup low sodium chicken broth
  • 1 teaspoon seasoning salt Recommended: Lawry's
  • ¾ teaspoon Italian seasoning
  • ¼ teaspoon black pepper

Method
 

Preparation
  1. Place the chicken breasts in a 2.5-4 quart crockpot.
  2. Pour in the chicken broth, and sprinkle the chicken with the seasoning mix.
Cooking
  1. Cover and cook on low for 3-4 hours or high for 2-3 hours until the chicken reads 165 degrees F and falls apart tender.
  2. Using two forks, gently pull and shred the chicken in the flavorful liquid. If your chicken releases too much liquid, you might want to remove some before shredding, but keep it on hand in case you want to add more back in.
Serving
  1. Serve as desired, or let cool before refrigerating.

Notes

Store the cooked chicken in an airtight container in the refrigerator for 3-4 days or freeze for 3-4 months. To elevate flavor, consider adding garlic, onion, or lime juice.
