Ingredients
  

Soup Base
  • 4-6 cups Broth (vegetable or chicken) Add enough to cover the ingredients.
Fall Vegetables
  • 3-4 medium Carrots Chopped into bite-sized pieces.
  • 2-3 medium Potatoes Chopped into bite-sized pieces.
  • 1-2 medium Squash Chopped into bite-sized pieces.
Proteins
  • 1 cup Beans (canned or dried) Any type of beans can be used.
  • 1 cup Lentils Preferably rinsed.
  • 1 pound Chicken Optional, cut into pieces.
Herbs and Spices
  • 1 teaspoon Thyme Can be fresh or dried.
  • 1 teaspoon Rosemary Can be fresh or dried.
  • 2 leaves Bay leaves Add for flavor.
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Begin by washing and chopping vegetables into bite-sized pieces.
  2. Add your chopped vegetables and proteins into the crockpot.
  3. Add enough broth to cover the ingredients, usually about four to six cups.
  4. Sprinkle in your herbs, spices, and any additional seasonings.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until everything is tender and delicious.
  2. Ladle the soup into bowls and enjoy warm alongside crusty bread or a side salad.

Notes

For added richness, serve your soup with a sprinkle of fresh herbs or a dollop of sour cream. You can augment flavors with garlic and onions, and feel free to substitute ingredients based on availability.
