  • 3 pounds sweet potatoes Washed and peeled
  • 1/2 cup granulated sugar Adjust based on sweetness preference
  • 1/3 cup light brown sugar Adjust based on sweetness preference
  • 4 tablespoons salted butter Cut into thin pats
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup water For slurry
  • 2 tablespoons cornstarch To thicken the mixture
  • Marshmallows (optional) Add for a gooey texture

Preparation
  1. Wash and peel the sweet potatoes, then cut them into slices about 1/4 inch thick.
  2. Place the sweet potato slices in the crockpot.
  3. Sprinkle the granulated sugar and light brown sugar evenly over the sweet potatoes.
  4. Cut the salted butter into thin pats and arrange them on top of the sweet potatoes.
  5. Dust the mixture with ground cinnamon and ground nutmeg.
Cooking
  1. In a separate bowl, create a slurry with cornstarch and water, then pour it over the sweet potato mixture.
  2. Cook on high for 3-4 hours or on low for 6-8 hours, stirring halfway through.
  3. The sweet potatoes are ready when tender and the cooking liquid thickens.
  4. Optional: Add marshmallows at the end and let them cook until gooey, or broil for a minute for a golden crust.

Notes

Choose even-sized sweet potatoes for uniform cooking. Experiment with toppings like nuts or a drizzle of maple syrup for a unique twist. Adjust sugars based on sweetness preference.
