  • 1 pound ground beef (lean 93/7)
  • 1 cup beef broth
  • 1 ounce taco seasoning
  • 1 teaspoon minced garlic
  • 30 ounces frozen diced potatoes (with peppers and onions)
  • 10.5 ounces condensed cheese soup
  • 1 cup salsa
  • 2 cups shredded Monterey Jack cheese
Garnishes
  • Fresh chopped cilantro for garnish
  • Sliced green onions for garnish

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat until no longer pink.
  2. Drain any excess liquid and add the minced garlic and taco seasoning. Cook for 1-2 minutes, stirring.
  3. In a slow cooker, mix the ground beef mixture with frozen diced potatoes, cheese soup, salsa, and half of the shredded cheese.
Cooking
  1. Cover the slow cooker and cook on low for 2-3 hours.
  2. Before serving, sprinkle the remaining cheese on top and cover for an additional 5 minutes to melt.

Notes

Browning the beef properly enhances the flavor. Customize with different cheeses, beans, or toppings to suit your taste. Leftovers can be stored in an airtight container for 3-4 days or frozen for longer storage.
