Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts (about 2 lbs)
  • 0.5 teaspoon salt
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon paprika
  • 0.125 teaspoon pepper
Sauce Ingredients
  • 1 cup heavy whipping cream
  • 1 tablespoon cornstarch
  • 3 cloves garlic (finely minced)
  • 0.25 teaspoon salt
  • 0.125 teaspoon pepper
  • 0.33 cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 0.25 cup grated Parmesan cheese
  • 1 cup chopped fresh spinach

Method
 

Preparation
  1. Begin by placing the chicken breasts in a 3- to 4-quart slow cooker.
  2. In a small bowl, combine the salt, Italian seasoning, paprika, and black pepper. Sprinkle this mixture evenly over the chicken to season it well.
  3. In another bowl, mix the heavy whipping cream and cornstarch until smooth, then pour this mixture over the seasoned chicken.
  4. Add the minced garlic, sun-dried tomatoes, additional salt, pepper, Parmesan cheese, and chopped spinach to the slow cooker.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  2. Once done, stir the mixture to coat the chicken in the creamy sauce before serving.

Notes

For added flavor, consider searing the chicken in a skillet before adding it to the slow cooker. Use fresh ingredients for a better taste. Adjust creaminess by adding chicken broth for a thinner sauce. This dish pairs well with pasta, rice, or a fresh salad.
