  • 4 pieces boneless, skinless chicken breasts (about 2 lbs)
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon paprika
  • 1/8 teaspoon pepper
  • 1 cup heavy whipping cream
  • 1 tablespoon cornstarch
  • 3 cloves garlic, finely minced
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup chopped fresh spinach

Method
 

Preparation
  1. Start by placing the chicken breasts in the bottom of your slow cooker.
  2. In a small bowl, combine the salt, Italian seasoning, paprika, and pepper. Sprinkle this mixture over the chicken evenly.
  3. In a medium bowl, whisk together the heavy whipping cream, cornstarch, minced garlic, salt, and pepper until smooth.
  4. Stir in the sun-dried tomatoes and Parmesan cheese, mixing well.
  5. Pour the creamy mixture over the chicken in the slow cooker.
Cooking
  1. Cover and cook on low for about 3 hours, or until the chicken reaches an internal temperature of 165°F.
  2. If the sauce separates, simply stir it until smooth. Then add the chopped spinach, taste, and adjust seasonings as needed.
  3. Finally, remove the chicken from the slow cooker and serve hot.

Notes

For a richer flavor, consider adding some fresh herbs like basil or thyme during cooking. If you’re short on time, you can also use pre-cooked chicken to make this dish even quicker. Just reduce the cooking time as needed.
