Preparation
- Start by placing the chicken breasts in the bottom of your slow cooker.
- In a small bowl, combine the salt, Italian seasoning, paprika, and pepper. Sprinkle this mixture over the chicken evenly.
- In a medium bowl, whisk together the heavy whipping cream, cornstarch, minced garlic, salt, and pepper until smooth.
- Stir in the sun-dried tomatoes and Parmesan cheese, mixing well.
- Pour the creamy mixture over the chicken in the slow cooker.
Cooking
- Cover and cook on low for about 3 hours, or until the chicken reaches an internal temperature of 165°F.
- If the sauce separates, simply stir it until smooth. Then add the chopped spinach, taste, and adjust seasonings as needed.
- Finally, remove the chicken from the slow cooker and serve hot.
Notes
For a richer flavor, consider adding some fresh herbs like basil or thyme during cooking. If you’re short on time, you can also use pre-cooked chicken to make this dish even quicker. Just reduce the cooking time as needed.
