  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced green chilies
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream or cream cheese (optional for creaminess) Adjust based on preference
  • Fresh cilantro for garnish

Preparation
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the white beans, corn, onion, garlic, and diced green chilies.
  3. Pour in the chicken broth and sprinkle the cumin, chili powder, salt, and black pepper over the top.
  4. Stir everything together to combine the ingredients well.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, shred the chicken in the slow cooker using two forks.
  3. If you like, stir in heavy cream or cream cheese to add smoothness and richness.
  4. Serve the chili hot, garnished with fresh cilantro.

Notes

For added flavor, consider sautéing the onion and garlic before adding them to the slow cooker. Customize the creaminess level to your taste; both heavy cream and cream cheese can be adjusted based on your preference.
