Ingredients
  

Main Ingredients
  • 4 pieces Chicken Breasts, skinless and boneless
  • 150 ml Diet Coke
  • 200 ml BBQ Sauce You can use low-sugar BBQ sauce if desired.
  • 2 tablespoons Tomato Puree
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Soy Sauce
  • 0.5 teaspoon Light Brown Sugar
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 pieces Spring Onions, chopped for garnish Optional garnish

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker basin.
  2. In a separate jug, whisk together the Diet Coke, BBQ sauce, tomato puree, garlic powder, smoked paprika, Worcestershire sauce, soy sauce, light brown sugar, salt, and black pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
Cooking
  1. Cook on high for 3-4 hours or on low for 4-5 hours.
  2. Once the chicken is cooked, carefully remove it from the slow cooker using tongs.
  3. Pour the leftover sauce from the slow cooker into a saucepan and bring it to a boil on the stove.
  4. Reduce the heat and let the sauce simmer until it thickens and coats the back of a spoon.
Serving
  1. Place the cooked chicken in a serving dish and pour the thickened Diet Coke BBQ sauce over it.
  2. Garnish with chopped spring onions and serve immediately.

Notes

For a richer flavor, consider marinating the chicken in the sauce overnight before cooking. Add chili powder or hot sauce for a spicy kick. Store leftovers in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months.
