Preparation
- Place the chicken breasts in the slow cooker basin.
- In a separate jug, whisk together the Diet Coke, BBQ sauce, tomato puree, garlic powder, smoked paprika, Worcestershire sauce, soy sauce, light brown sugar, salt, and black pepper.
- Pour the sauce mixture over the chicken in the slow cooker.
Cooking
- Cook on high for 3-4 hours or on low for 4-5 hours.
- Once the chicken is cooked, carefully remove it from the slow cooker using tongs.
- Pour the leftover sauce from the slow cooker into a saucepan and bring it to a boil on the stove.
- Reduce the heat and let the sauce simmer until it thickens and coats the back of a spoon.
Serving
- Place the cooked chicken in a serving dish and pour the thickened Diet Coke BBQ sauce over it.
- Garnish with chopped spring onions and serve immediately.
Notes
For a richer flavor, consider marinating the chicken in the sauce overnight before cooking. Add chili powder or hot sauce for a spicy kick. Store leftovers in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months.
