  • 2 pounds chicken breasts Use high-quality chicken for best flavor.
  • 2 medium bell peppers, sliced Any color bell peppers can be used.
  • 1 medium onion, sliced Use yellow or red onion for sweetness.
  • 2 tablespoons fajita seasoning Customize with extra spices if desired.

Method
 

Preparation
  1. Place chicken breasts in the bottom of the crockpot.
  2. Slice bell peppers and onions and add them on top of the chicken.
  3. Sprinkle fajita seasoning over everything.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and mix with the peppers and onions.
Serving
  1. Serve in warm tortillas topped with cheese, fresh cilantro, or a splash of lime.

Notes

To store leftovers, allow to cool and transfer to an airtight container; refrigerate for up to 3 days. Freeze in portions for longer storage. When reheating, ensure chicken reaches an internal temperature of 165°F.
