Preparation
- Place chicken breasts in the bottom of the crockpot.
- Slice bell peppers and onions and add them on top of the chicken.
- Sprinkle fajita seasoning over everything.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix with the peppers and onions.
Serving
- Serve in warm tortillas topped with cheese, fresh cilantro, or a splash of lime.
Notes
To store leftovers, allow to cool and transfer to an airtight container; refrigerate for up to 3 days. Freeze in portions for longer storage. When reheating, ensure chicken reaches an internal temperature of 165°F.
