  • 1 cup sun-dried tomatoes Use high-quality for better flavor

  • 1 cup mozzarella cheese, shredded Can swap for parmesan or cheddar
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the sun-dried tomatoes and minced garlic on top of the chicken.
  3. Pour the heavy cream over the chicken and tomatoes.
  4. Sprinkle Italian seasoning, salt, and pepper over the mixture.
  5. Cover and cook on low for 5-6 hours or high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle the mozzarella cheese on top and cover to allow it to melt.
  7. Serve hot, garnished with fresh basil.

Notes

Store leftovers in an airtight container for up to three days, or freeze for up to three months. Reheat thoroughly before serving. For extra flavor, consider adding spinach or artichokes.
