  • 4 medium potatoes, diced Versatile, can be swapped for sweet potatoes
  • 3 carrots, sliced
  • 1 onion, chopped
  • 4 cups beef broth Can substitute with vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil (optional, for browning beef) Optional for added flavor

Preparation
  1. In a large skillet, heat olive oil over medium-high heat. Brown the beef chunks on all sides and transfer them to the slow cooker.
  2. Add the diced potatoes, sliced carrots, chopped onion, garlic powder, thyme, salt, and pepper into the slow cooker.
  3. In a separate bowl, combine the beef broth and tomato paste; stir until well mixed. Pour this mixture over the ingredients in the slow cooker.
Cooking
  1. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the meat and vegetables are tender.
  2. Serve hot and enjoy your comforting beef stew!

Notes

For a richer flavor, consider browning the beef in batches. If pressed for time, you can skip browning and add raw beef directly to the slow cooker, but this may affect flavor.
