- In a large skillet, heat olive oil over medium-high heat. Brown the beef chunks on all sides and transfer them to the slow cooker.
- Add the diced potatoes, sliced carrots, chopped onion, garlic powder, thyme, salt, and pepper into the slow cooker.
- In a separate bowl, combine the beef broth and tomato paste; stir until well mixed. Pour this mixture over the ingredients in the slow cooker.
Cooking
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the meat and vegetables are tender.

Notes
For a richer flavor, consider browning the beef in batches. If pressed for time, you can skip browning and add raw beef directly to the slow cooker, but this may affect flavor.
