For the Chicken
  • 2 pieces bone-in skin-on chicken breasts, split in halves
  • 1.5 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • to taste Salt and freshly ground black pepper
For the Base
  • 2 pieces red onions, sliced

Method
 

Preparation
  1. Start by arranging the sliced red onions in a single layer at the bottom of your slow cooker.
  2. In a small bowl, mix the chili powder, paprika, garlic powder, salt, and pepper to create a spice blend.
  3. Generously rub the spice mix all over the chicken breasts, ensuring they’re well-coated for maximum flavor.
  4. Place the seasoned chicken on top of the onion layer in the slow cooker.
Cooking
  1. Cover the slow cooker and set it on high. Cook for about 210 to 240 minutes or until the chicken is tender and reaches an internal temperature of 165 degrees F.
  2. Once cooked, drizzle some of the liquid from the bottom of the slow cooker over the chicken before serving.

Notes

To store leftovers, cool completely before placing in an airtight container. It can be kept in the refrigerator for up to four days, or frozen for about three months. To reheat, microwave or warm in a pan until heated through.
