- In a crockpot, combine the chicken breast, white beans, corn, onion, garlic, green bell pepper, broth, cumin, chili powder, salt, and pepper.
- Stir everything together to ensure that the chicken is submerged in the liquid.
- Cook on low for 6-8 hours or until the chicken is cooked through.
- Once done, remove the chicken, shred it with two forks, and return the shredded meat to the crockpot.
- Stir in the lime juice and adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro if desired.
Notes
For best results, serve with warm cornbread, over rice, or with sour cream and a sprinkle of cheese. Can use pre-cooked rotisserie chicken to save time.
