  • 1 lb boneless, skinless chicken breast
  • 1 can white beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 4 cups vegetable or chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. In a crockpot, combine the chicken breast, white beans, corn, onion, garlic, green bell pepper, broth, cumin, chili powder, salt, and pepper.
  2. Stir everything together to ensure that the chicken is submerged in the liquid.
  3. Cook on low for 6-8 hours or until the chicken is cooked through.
  4. Once done, remove the chicken, shred it with two forks, and return the shredded meat to the crockpot.
  5. Stir in the lime juice and adjust seasoning to taste.
  6. Serve hot, garnished with fresh cilantro if desired.

Notes

For best results, serve with warm cornbread, over rice, or with sour cream and a sprinkle of cheese. Can use pre-cooked rotisserie chicken to save time.
