- Set the Instant Pot to sauté mode. Heat the olive oil and brown the beef stew meat on all sides.
- Add the chopped onion and minced garlic to the pot, and cook until softened.
- Stir in the tomato paste, dried thyme, Worcestershire sauce, salt, and pepper, mixing everything thoroughly.
- Layer in the diced potatoes and sliced carrots, then pour in the beef broth.
- Secure the lid of the Instant Pot and set it to high pressure for 35 minutes.
- Once the cooking time is complete, allow for a natural pressure release for about 10 minutes before quick releasing any remaining pressure.
- Serve hot and enjoy every comforting bite!
