  • 2 pounds beef stew meat
  • 1 pound potatoes, diced
  • 4 pieces carrots, sliced
  • 1 piece onion, chopped
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Set the Instant Pot to sauté mode. Heat the olive oil and brown the beef stew meat on all sides.
  2. Add the chopped onion and minced garlic to the pot, and cook until softened.
  3. Stir in the tomato paste, dried thyme, Worcestershire sauce, salt, and pepper, mixing everything thoroughly.
  4. Layer in the diced potatoes and sliced carrots, then pour in the beef broth.
  5. Secure the lid of the Instant Pot and set it to high pressure for 35 minutes.
  6. Once the cooking time is complete, allow for a natural pressure release for about 10 minutes before quick releasing any remaining pressure.
  7. Serve hot and enjoy every comforting bite!

Notes

This beef stew can be enjoyed on its own or paired with warm crusty bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
