  • 3-4 lbs chuck roast Choose a chuck roast for optimal flavor and tenderness.
  • 1 packet ranch seasoning mix For seasoning the roast.
  • 1 packet au jus gravy mix Adds depth of flavor.
  • 6-10 pieces pepperoncini peppers Adjust to taste for desired spice level.
  • 2 tbsp butter For added richness.
  • 1 cup beef broth To help cook the roast.

Preparation
  1. Begin by seasoning the chuck roast generously with salt and pepper.
  2. Place the seasoned roast directly into the Instant Pot.
  3. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the top of the roast.
  4. Add the pepperoncini peppers, then pour the beef broth around the roast (not directly over it to keep the seasoning intact).
  5. Dot the top of the roast with butter for an extra touch of richness.
  6. Secure the lid on the Instant Pot and set the valve to sealing.
  7. Cook on high pressure for 60 minutes.
  8. Once the cooking time is up, allow for a natural release for about 15 minutes, followed by a quick release of any remaining pressure.
  9. Carefully remove the roast and shred it using two forks—it should be super tender!
  10. Serve the shredded beef with the flavorful gravy created in the pot.

Notes

For best taste, serve over mashed potatoes or with roasted vegetables. Leftover roast can be made into sandwiches.
