  • 1 pound ground beef or turkey Choose according to preference.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 bell peppers, chopped (red, green, yellow)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup beef or vegetable broth
  • 1 cup rice (uncooked) Brown rice or quinoa can be used for a healthier alternative.
  • 1 tablespoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional, for serving)
  • for garnish Fresh parsley (optional)

Method
 

Cooking Instructions
  1. Set your Instant Pot to the sauté mode. Add the ground beef or turkey and cook until browned, draining any excess fat.
  2. Add the chopped onion, garlic, and bell peppers. Sauté for about 5 minutes until they start to soften and become fragrant.
  3. Stir in the diced tomatoes, broth, uncooked rice, Italian seasoning, salt, and pepper. Mix well to combine all ingredients.
  4. Close the lid of the Instant Pot and set it to manual high pressure for 10 minutes.
  5. Once cooking is complete, allow for a natural pressure release for 5 minutes, then quick release any remaining pressure.
  6. Give the soup a good stir, check the seasoning, and serve hot, garnished with cheese and parsley if desired.

Notes

For added depth of flavor, consider adding a splash of Worcestershire sauce or hot sauce during cooking. Don’t skip the sautéing step, as it builds rich flavors that enhance the soup. Feel free to experiment with ingredients like different proteins and spices.
