Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, heat some olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add the sliced kielbasa and cook until browned.
- In a large bowl, combine the potatoes, cooked kielbasa and onion mix, sour cream, cream of mushroom soup, milk, salt, and pepper.
- Transfer the mixture into a greased baking dish and top with shredded cheese.
- Bake for 30-40 minutes or until the potatoes are tender and the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
This dish can be paired with a simple salad or steamed vegetables, and is delicious served with garlic bread or biscuits. Leftovers can be stored in an airtight container for up to 4 days in the refrigerator.
