  • 1 lb kielbasa sausage, sliced
  • 4 cups potatoes, peeled and diced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 onion, diced
  • Salt and pepper to taste
  • Olive oil (for cooking)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat some olive oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add the sliced kielbasa and cook until browned.
  4. In a large bowl, combine the potatoes, cooked kielbasa and onion mix, sour cream, cream of mushroom soup, milk, salt, and pepper.
  5. Transfer the mixture into a greased baking dish and top with shredded cheese.
  6. Bake for 30-40 minutes or until the potatoes are tender and the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

This dish can be paired with a simple salad or steamed vegetables, and is delicious served with garlic bread or biscuits. Leftovers can be stored in an airtight container for up to 4 days in the refrigerator.
